Sundays are my prep days. Okay so Sunday mornings are typically lazy – as I firmly believe they should be – but I like to get a jump start on the upcoming week by doing some meal prep. Eating whole, nutritious foods is a big priority for me, and I know that if I do the work ahead of time to make it easy on myself, I’m much more likely to follow through.

Meal prepping can really be a simple thing. I typically clean out the produce aisle and stock up on fruits, veggies, and some healthy grains like quinoa or farro. Then I fire up the oven, chop up the veggies, and bake them with some olive oil until they’re nice and soft. You can do the same with salmon or chicken if you’re a meat eater.
Store everything in airtight containers and it will become so easy to whip up some easy lunches. I also love making smoothie bags with fruit that you can dump into the blender with some milk for a healthy breakfast. We all have a bit of a sweet tooth in my family, so we like to have a dessert on hand. If you use the right ingredients – oats, honey, whole wheat flour, and ghee – even chocolate chip cookies can become a healthy treat!
